Gluten & Dairy Free Chocolate Chip Banana Bread

What do you do when your bananas go bad? Make banana bread!

I hadn’t made gluten/dairy free banana bread yet, so when my bananas turned brown, I was ready to experiment with different recipes.  I made my own recipe up because I couldn’t find a recipe that I liked completely.  The bread came out DELICIOUS! It was super moist.  The look and texture were not the best though.  It falls apart easily, better if you use a fork.  It wasn’t very pretty also, hehe.  But the taste makes up for the look.

The combination of banana, chocolate chips, and walnuts made it so good.

Here is the recipe:

1/4 cup Earth Balance butter

1/4 cup shortening

2 eggs

3 brown bananas

1/2 cup brown sugar

1/2 cup sugar

1 cup Bob’s Red Mill GF flour

1/2 cup oat flour (I just threw some oats in the food processor)

2 tbsp soy milk

1 tsp vanilla

1 tsp cinnamon

1 tsp salt

1 tsp baking powder

1 tsp baking soda

1/2 cup chopped walnuts

1/2 cup dairy free chocolate chips

Whip the shortening and Earth Balance butter together till fluffy.  Mash up the bananas in a separate bowl.  Combine the shortening and butter mixture with the eggs and sugars then mix in the bananas, vanilla, milk, and cinnamon.  Add the dry ingredients, chocolate chips, and nuts and mix all together. Put in a 9×13 cake pan.  (Note: I put half in a muffin tin, and half in a 8×8 pan).   Bake at 350 for about 20 mins, or until a toothpick comes out clean.
