Egg Potato & Spinach Scramble

I was craving some eggs and potatoes when I woke up this morning! I decided to make an egg, potato and spinach scramble.

I diced up half of  a russet potato and sauteed it with some Earth Balance butter, sprinkled with some salt, pepper, and garlic powder.

Once the potatoes were browned, I threw in a handful of spinach and an egg and scrambled it all together.

Voila!

And of course, you can’t forget the ketchup!
