Chickpea Stirfry

I had a very interesting lunch.  I had some leftover chickpeas, broccoli, and a few brussel sprouts, so I decided to throw them all together in a stirfry!  First, I baked the brussel sprouts and broccoli with a little bit of olive oil for about 20 minutes.

Once the brussel sprouts and broccoli were tender and browned, I sauteed them together with garlic and chickpeas.  I threw in some brown rice near the end.

I hadn’t used chickpeas in a stirfry before, so didn’t know what to expect, but it was surprisingly very tasty!

  2. I recently tried brussel sprouts for the first time, my mom never cooked them when I was younger. I loved them!
