Egg & Potato Tacos

I made egg and potato tacos for lunch today!  They were so good.  First, I chopped up a russet potato, and fried it up in a pan with a little bit of Earth Balance butter.  Then I scrambled up an egg with the potato, and put it on a warmed corn tortilla.

I topped my taco off with some ketchup and hot sauce.

Delicious and easy!
