Irish Boiled Dinner

Every year around St. Patty’s day we have corned beef and cabbage!

This dinner is great for two reasons.  It tastes like a great home cooked meal, and it’s very easy to prepare.  I have been studying like crazy the last couple of days for my school finals, so I haven’t had much time to cook meals that are picture worthy.  But for this dinner, I basically just threw the chunk of meat in a big pot of water and let it simmer for around 3 hours, then tossed in the vegetables and let it continue to simmer for another hour.  I didn’t have to touch it or stir it at all! Perfect meal for a busy college student. It is also hardy and brings back memories of eating on Sunday afternoons with the family.
Does anyone else have a tradition of cooking corned beef and cabbage for St. Patrick’s Day?

    I have never ever had corned beef & cabbage even though I’m Irish AND I’ve been to Ireland. This needs to be changed immediately. Thank you for the reminder 🙂

    • Well I just heard on the radio this morning that corned beef and cabbage is actually an irish-american tradition! Never knew that… Still a very good dinner you should try! 🙂
